I'd like to do them, proto-drakes are cool!
I'd also like to try and do ToC25 every week until I get the gosh darned trinket.

Looks like there's decent interest. I will create an event on the guild calender for this monday. This is a good week for it since the weekly is in ICC.
Ulduar hard modes, and my opinion on tackle-ability:
Flame leviathan: We were doing this guy with 2 lights up on level~! We should be able to do him at full power. Vehicles scaling with gear means if we all wear 245+ gear, we're amazingly OP. But don't expect to zerg rush this bad boy. Every light up adds a significant amount to his life.
XT-002: Done (at least once on 10 man)
Iron Council: Done a couple of times (on level) but not with Steelbreaker last. Modern krazy dps should be able to zerg him while he gibs tanks.
Hodir: Done. Should be easy now, even with a warrior tank~! Zerg rush, kekekeke
Thorin: Done* (I think? at least once on 10 man. I know we triggered it.) Again, should be easy. healers are used to dealing with unavoidable raid dmg from ICC.
Freya: I don't think we ever tried leaving all 3 keepers. I know last attempt i participated in was 2 keepers up (and we couldn't clear)... Might still be a challenge now.
Mimiron & Vezax & Yogg: These guys were so hard on normal, only a handful of guild raiders got practice on them. Hard modes? Not this week.

Just remember that only so much of the Hard Modes were down to dps/healing, and a lot was on that ever-nuisance coordination and paying attention. To addendum the boss list:
Flame leviathan: In addition to extra health, there's more things not to stand in/drive through, and a giant lasher add in the mix. Zergs worked for us because we were not great at picking up people catapulted onto FL and getting ready for a 2nd round. And those who did live would usually load right back up to be catapulted before grabbing more ammo, which killed dps in more ways than one.
XT-002: We have done heartbreaker twice or so, and at least once in 25 man we nearly triggered it on accident during a weekly run. This is likely the easiest of the hardmodes for us since it's mostly a tank-and-spank fight with a little running and a few adds after each lightbomb to dps.
Iron Council: We did do this gang with Steelbreaker last, because it turned out it's easier than leaving that middle guy for last. The fight in general is probably doable even for 25.
Hodir: The reason this was able to be done hardmode, i.e. on the timer, was because of the coordination of npc buffs, storm buff,and standing in light columns. It takes coordination and positioning to get the dps stacked high for that.
Thorim: We did this a couple times too. Partly it's up to the strike team to clear it fast, which should be easier. Then it's up to staying alive on phase 2. Being able to heal unavoidable raid damage in ICC is one thing, being able to avoid standing in the wrong spot is another.
Freya: I think it was how 1 keeper was easy on 10-man, but turned out to be a big problem on 25. Nevermind 2 and 3.
Mimiron & Vezax & Yogg: according to my stats, Mimiron was defeated 25-man once, 10-man twice; Vezax only in 10-man twice; Yogg-Sara was one time after 2.5 hours of wipes. And that was with all 4 keepers up. Though there are achievements for each less keeper up, the hardmode credit for the meta is for 1 keeper up. And the guaranteed Mimiron flying head mount is only from 25-man, zero keepers. I've seen a lot of iron and rusted protodrakes around, but I still havn't seen anyone with the Mimiron flying head.
If we want to finish the hard modes out, I'd almost suggest extending raid locks over and over again. Little of the loot is an upgrade, and certainly not worth the amount of re-clearing each week to re-try one boss for one drop for a couple people.
