what would you do?

Let me begin by saying I currently have Engineering as one profession. However, I'm thinking about dropping it for enchanting (for the +dps to rings) or tailoring (for the Swordguard Embroidery)? The only reason I had engineering was for the goggles and see no reason to keep it. The rings would give me a + 64 ap all the time and the embroidery would grant me the chance to have 300 for 15 seconds. Not sure which is better. Also, if you can think of another profession that would provide a dps boost, besides blacksmith, please let me know, thanks!

Jewelcrafting is another option. The difference between 3 rubies for AP and 3 dragoneyes with AP is 66AP. Plus this also gives you the option to put pure AP into some of your blue gem slots and still get the slot bonus for even more AP. The increase to AP is quite a bit higher than what you would gain out of enchanting.

There should still be something here other than the goggles for engineering, haste to gloves? rocket boots? Belt enhancement? things that go boom?
But yeah, if you already have blacksmithing, then you get +2 prismatic sockets, so with JC, you could put 3 dragon's eye +27 str gems into your blue sockets, and put 2 more +16 str gems into the prismatic sockets, and your ability to pull aggro and evoke calls of "LIVE, PAUL, LIVE!" go way up. :D

If you're going to switch, I'd say go with Jewelcrafting. The devs have mentioned that they want warriors to focus more on strength than on AP, so it might be better for you to get the +27 strength gems (which you can have up to three of). And selling raw and cut gems can be fairly profitable, or so I am told.

Also, JC is less of a headache to level than Enchanting is. ^_^;
